i think it's one of the best ever smells of my childhood. oats, nuts, grains - all toasting away with a dose of brown sugar for a bit of sweetness. i LOVED it when she made muesli.
i love muesli and i love making it myself. i have to admit i don't really make it as much as i would like, but when i do it makes me feel really wholesome.
it's very simple. you only need a few ingredients and you can add anything you wish. i start with putting the following into a large bowl:
2 cups rolled oats
1 cup bran flakes
1/2 cup of wheatgerm (the mineral rich part of the wheat kernel), i say a small bit because i don't always like the flavour to overwhelm
then i add; shredded coconut, flaked almonds, ground almonds, sesame seeds, any nuts if i have them around (peanuts or cashews are my fav) and chopped dates and sometimes i usually put a little amount of ground vanilla pods through it too.
i then melt 100g butter and combine it with my favourite honey (Katikati's finest) and pour it over until every thing is coated and well mixed. the amount of honey is up to your sweet tooth - usually most people don't want much as the dates and sultanas give a lot of sweetness to the muesli.
the oven is set to 150deg C and i tip the mix into a baking tray and lightly toast the muesli until its golden. i have to keep checking every 10mins to mix it up and make sure its an even toast.
afterwards i add sultanas because they usually catch and burn when i toast them so now i just leave them till last!
